Absolut Vodka have designed a cocktail for me. It’s called ‘Absolut Ramm’ and is inspired by the Scottish landscape:
‘My favourite aroma is the scent of sap rising in the pine forests. This is usually particularly strong in springtime or where forests have been felled. It is a sweet delicate scent, not at all like the synthetic pine-branded household products on the commercial market. The closest matching taste that I know of would probably be heather honey, though it is not exact.
The young pine needles from the trees can also be eaten and have a sharp, clean and spicy tang to them. They are rich in vitamin C and I often eat them pickled in salads. When the pine buds have just opened in the spring they are a bright luminous green, gradually turning darker throughout the year. This sharp flavour could perhaps be complimented by apple or pear (or melon, though it can’t be grown here).’
